MY OWN RASPBERRY JAM


Psyllium seeds

For you who are sick of buying jam loaded with lots of sugar and other weird preservatives, there's an easy way of doing it yourself at home. Here's my simple raspberry jam recipe, using the fibre supplement psyllium seeds as the binding matter, making about 300gr:

INGREDIENTS:
2 dl frosen raspberries
1 dl water
1 tsp sugar
1/4 tsp natural sweetener (such as Stevia, Truvia, Xylitol)
1 tblsp psyllium seeds
a few drops lemon juice

Boil raspberries and water together with sugar for about 1 minute. Let it cool a little bit and add the natural sweetener, psyllium seeds and lemon juice. Stir well to distribute the psyllium seeds. Let it cool for around 20 minutes until it's a semi-runny consistency. Pour into a glass jar with a lid and store in the fridge for whenever needed. All done! Lovely jam for your porridge, toast, etc. Enjoy!


All ingredients mixed together, set to cool.
